If you make a large portion, you can store the watercress in a jar with a lid for about 1 week in the fridge. You can also mix the dip with creme fraiche and use it for a potato salad.

  • Watercress
  • Salt
  • Oil
  • Lemon

Instructions

  1. Rinse the watercress and blanch it in boiling water for 20 seconds.
  2. Then quickly cool it down in ice water. Strain the water and blend the watercress with a little salt and oil.
  3. Season with lemon juice.
