Squash and winter chanterelles are perhaps two of the foods most present in my food autumn. Hokkaido squash has a manageable size and a wonderful flavor that goes beautifully with mushrooms.

Instructions
- Halve your squash, and scoop out the flesh with a spoon.
- Slice the squash, but keep the skin on. The slices should be max. 2 cm thick. Fry them at low heat in oil until they are tender.
- Now fry a good handful of winter chanterelles for the last 5 minutes, add a small knob of butter and a little lemon juice.
- Serve with a few chopped pistachios on top.
