Grilled pork tenderloin in mugwort

Grilled pork tenderloin in mugwort
Main courses Easy 30 min

Pork tenderloin is grilled and tied together with mugwort, so the meat absorbs the herb's spicy aroma.

Wild ingredients

Ingredients

  • 1 pork tenderloin
  • 25 mugwort tops
  • Salt and pepper

Instructions

  1. Trim the tenderloin free of sinews and clean the mugwort.
  2. Grill the pork tenderloin until the surface is light brown. Season the meat with salt and pepper.
  3. Place the tenderloin on top of the mugwort and tie the pieces together with kitchen string.
  4. Then grill the tenderloin on indirect heat for about 20 minutes, until it is still juicy but has absorbed good flavour from the mugwort.
  5. Unwrap and slice the tenderloin thinly, optionally place it back on the "bed" of mugwort.
