Grilled deer heart with black trumpets, blackberries, and pickled wild onions

Game, berries, and mushrooms are a trinity that works well together. Here I've added pickled onions. Deer heart is one of my favorite game foods, and it's easy to prepare.

Wild ingredients

  • deer hearts
  • butter
  • horn of plenty
  • salt and pepper
  • Serving:
  • blackberries
  • pickled wild onions
  • a little olive oil

Instructions

  1. Trim the deer hearts free of membranes and chambers. You can cut two large pieces from each heart, and it's a bit easier to handle if you set them aside.
  2. Grill the deer hearts on both sides for as short a time as you feel comfortable with. I like red hearts, and it is certain that the grill time rarely exceeds 2-3 minutes per side.
  3. Let the hearts rest for 3 minutes on a cutting board, and slice them.
  4. Clean the black trumpets by snipping off the bottom part, and split them so woodlice, leaves, and the like can come out. Then fry the mushrooms in butter, and season.
  5. Arrange the mushrooms with halved pickled wild onions, halved blackberries, and drizzle with a little good olive oil.
