I don't know if ceviche is quite the right term for this dish. In all its simplicity, it consists of various pickled and blanched chanterelles.

Instructions

  1. Chanterelles are clearly best for this dish, but other small, fine, crispy mushrooms can also be used.
  2. I've used some of the various wild, pickled things I have on hand. Nobilis cone scales, white strawberries, cucumber, wild onion shallots, and fermented wild garlic.
  3. I have blanched the chanterelles in lightly salted water.
  4. The marinade consists of a little pickling brine and good olive oil.
  5. It is a fresh dish that invites you to have more. You could also call it a snack or an appetizer.
