For this dish you need porcini. It is a variation of the classic porcini carpaccio, but here there are a few more flavors involved.

  • porcini
  • Marinade:
  • extra virgin olive oil
  • lemon juice
  • salt and pepper
  • Fresh herbs, preferably with a hint of citrus

Instructions

  1. Make a marinade of your best extra virgin olive oil and a little freshly squeezed lemon juice. Add salt and pepper, and shake well.
  2. Cut porcini into small cubes, and toss them in the marinade.
  3. Serve as a starter or a delicious side dish with good bread.
  4. Optionally use a mix of herbs in the marinade. I have many different ones in the garden and have used lemon balm, lemon verbena, olive herb, Mexican tarragon, and bronze fennel.
