Ground elder can be picked in large quantities from April and can be found right up until frost. The more light green, the more mild and delicious it is in flavour.

Instructions
- Put water and salt in a pot and bring to a boil. Meanwhile rinse the ground elder thoroughly, then briefly blanch it in the boiling water and drain in a sieve. Squeeze out the last water with your hands and chop the ground elder finely.
- Heat the cream in a pot and add the steamed and chopped ground elder. Let it simmer over low heat until it has a creamy consistency, supplementing with a little milk if needed.
- Season with salt, pepper, a little lemon juice and nutmeg.
- Toast the bread, add the creamed ground elder and grate cheese and lemon zest over.
