If you make a large portion, you can store the watercress in a jar with a lid for about 1 week in the fridge. You can also mix the dip with creme fraiche and use it for a potato salad.

Instructions
- Rinse the watercress and blanch it in boiling water for 20 seconds.
- Then quickly cool it down in ice water. Strain the water and blend the watercress with a little salt and oil.
- Season with lemon juice.
