Wild Garlic
In the shade of moist deciduous forests where wild garlic thrives, its oblong, fully green leaves can completely cover the forest floor while filling the air with garlic scent. It can be an absurd abundance. Wild garlic blooms in April and May with white flowers, and in June you can collect its seeds for capers. In New Nordic cuisine, wild garlic is a cornerstone that more and more people also use at home. It can be used anywhere you would use onion and garlic. I love the capers, but fermenting wild garlic is also fantastic. Many like to make herb butter, pesto and oils from the abundant wild garlic.
