Porcini
Porcini, or cep as it is properly called, is a very popular edible mushroom found in many different types of forest. In principle you can find porcini in all forests, but it prefers spruce plantations, silver fir and beech forest. Summer bolete is porcini's cousin and arrives a little earlier – it is slightly lighter and softer, but unfortunately almost always attacked by worms.

Recipes with Porcini
Mushroom salsa
For this dish you need porcini. It is a variation of the classic porcini carpaccio, but here there are a few more flavors involved.
